2/3 cup soymilk ¼ cup soy oil
2 eggs slightly beaten
1 ¼ cup all-purpose flour ½ cup Soy Flour
1 tsp baking powder 1 tsp baking soda
1 cup bran flake cereal
½ cup brown sugar
¾ tsp ground cinnamon
1/8 tsp ground cloves
½ cup raisins
Stir together all dry ingredients. Combine eggs, soymilk and soy oil. Add egg mixture to flour mixture; stir until moistened. Fold in raisins. Fill muffin pan 2/3 full. Bake in a 400 degree oven for 15-20 minutes.
Per serving 1 muffin: 134 calories, 4.7 g protein, 26.4 g carbs, 6.7 g total fat, .8 g sat fat, 30 mg cholesterol, 188 mg sodium.
